Goat Cheese and Herb Spaghetti
16 oz. spaghetti
1/4 cup chopped flat-leaf parsley
3/4 cup goat cheese, crumbled
1/2 cup grated pecorino romano cheese
Salt
1/2 cup extra-virgin olive oil
Cook spaghetti until al dente.
Next, allow spaghetti to cool to room temperature so cheeses do not melt. Next, toss in a large bowl with olive oil, parsley, salt, romano, and goat cheese. Serve at room temperature and enjoy!
